Kypros by Cat Stevens is a great piece of music.

My dad loved it and introduced me to it. Whenever I'm missing him loads (which is loads) I give it a listen.

And talking of Genesis, not strictly entirely an instrumental but I would have to nominate the 'In The Cage/Cinema Show/Slippermen' medley from Three Sides Live which is mostly instrumental after the In the Cage section.
